Buttermilk Syrup

1 cube butter
3/4 C buttermilk (measure regular milk and add 1/2 tsp vinegar OR lemon juice let sit 5 minutes)
1 1/2 C sugar
2 T corn syrup
Boil until butter is melted.

Add
1 tsp baking soda
2 tsp vanilla
It will foam up so make sure to cook in large pan.

Elsa Ice Candy

Elsa birthday cake for Cora
Making this is very similar to making suckers. Just leave out the molds.
Directions:
3/4 cup Corn Syrup
2 cups Sugar
1/2 cup water
Bring to  boil. Stir constantly until mixture reaches 300 degrees. Add food coloring and pour into a greased cookie sheet that has an edge. Place in fridge until hardened. Then break into pieces. 
It was easy.

Microwave Peanut Brittle

I love this recipe because it is so easy for one of my favorite holiday treats.

1 1/2 C unsalted peanuts
1 C. sugar
1/2 C light corn syrup
1/8 tsp. Salt
1 TBSP butter or marg.
1 tsp. vanilla
1 tsp. baking soda

In a large glass bowl combine: peanuts, sugar, corn syrup and salt. Cook on high for 7 minutes (mixture will bubbly and peanuts are browned). Quickly stir in butter and vanilla, Cook on high for 2 minutes. Add baking soda, stir quickly just until mixture is foamy. Pour on a greased baking sheet. Cool until firm. Break into pieces. Store in an airtight container.
*You can use salted peanuts just omit the 1/8 tsp of salt.

Grandpa's Homemade Ice Cream

Dad’s Vanilla Ice Cream
From Martin Davidson
My Dad’s ice cream that we all look forward too.
Makes 6 quarts.

7 cups Milk
2 cans Evaporated Milk
1 can Eagle Brand Milk
1 cup Sugar
1 Tbs Vanilla

Directions:
Mix together and put in ice cream maker. Let run until machine stops (about 30 minutes).

Chinese Sundays A.K.A. Hawaiian Haystacks

I've had people asking for this recipe (we had it at a work party that I was in charge of). When I first had this it was served at my Grandma Lamarr's house it was the strangest thing and she told us that on our first one (that we made small) we had to put all the ingredients. It has been a family favorite ever sense.
Yes, this has two names. I grew up calling it Chinese Sundays whereas my husband's family calls it Hawaiian Haystacks. This is what we served for our wedding dinner. The funny thing about this recipe is that everyone makes it a little different. So I am just going to list the ingredients that we use.

Ingredients:
Rice
Chopped Chicken (or turkey)
Shredded Cheese
Chinese Noodles
Chicken Gravy (I like to use cream of chicken soup)
Celery
Pineapple
Tomatoes
Green onions
slivered almonds
shredded coconut
Maraschino Cherry (top it with a cherry to make it a sunday)

Other toppings that I've seen people add
Sunflower seeds
Olives
Bacon bits
Directions:
Measurements will depend on how large of a group you are serving. In our family we like to line the ingredients on the counter in the order listed above and go through the line because you just put a spoonful of each ingredient on your plate. I like to put the gravy on at the end too.

And you know it is good when the kids lick their plates clean!

World's Best Lasagna

Ingredients

  • *add a dash of nutmeg to the sauce to make it more authentic and delicious!
  • 1 pound sweet Italian sausage
  • 3/4 pound lean ground beef
  • 1/2 cup minced onion
  • 2 cloves garlic, crushed
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 1/2 cup water
  • 2 tablespoons white sugar
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 pound mozzarella cheese, sliced
  • 3/4 cup grated Parmesan cheese

Directions

  1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

This makes the best lasagna my family has ever had, even compared to Olive Garden! Plus we get the fun of making it alll day long together. It is expensive to buy all the ingredients, but it makes a like ten pounds. You can have plenty of leftovers (if there are only two of you hee hee), so it is not actually that expensive. MMMM MMMM
