Little Bit O' Honey Candy

Ingredients:
1/2 cup honey
1/2 cup crunchy peanut butter
1 cup powdered milk

Directions:
In microwave safe bowl melt honey and peanut butter for 45 seconds. Then stir in powdered milk. Let cool then mix or knead until smooth. Pour onto wax paper. cover with wax paper (so you have wax paper on top and bottom. Use rolling pin to roll out to 1/4 inch in thickness. Refrigerate to help harden. Use pizza cutter or sharp knife to cut into pieces.  If this taffy like candy lasts long enough you can wrap the pieces in wax paper.:)

I love this quick and easy recipe when I need something sweet.
I used parchment paper instead of wax paper.

Elsa Ice Candy

Making this is very similar to making suckers. Just leave out the molds.
Directions:
3/4 cup Corn Syrup
2 cups Sugar
1/2 cup water
Bring to  boil. Stir constantly until mixture reaches 300 degrees. Add food coloring and pour into a greased cookie sheet that has an edge. Place in fridge until hardened. Then break into pieces. 
It was easy.

Peanut Butter Crunchy Bars

My co-worker Ramona shared this recipe and it reminded me of the PB treats that schools serve.

Peanut Butter Crunchy Bars
2 cubes of butter (must be butter, no margarine,etc)
3 c. peanut butter  (creamy works best)
4 1/2 c. powdered sugar
5 1/2 c. rice crispies (can use gluten free)
3 bags of Ghirardelli milk chocolate chips

  • soften (not melt) butter
  • mix butter and peanut butter
  • add sugar--mix
  • add rice crispies--mix
  • press in pan (13 x 18 in--like jelly roll pan) OR 1/2 the recipe will make a 8x13 pan
  • melt chocolate--spread on top
  • refrigerate--2 min. should be enough to set

This is a recipe that Aunt DeAnn makes that the kids love.

1 Cup of each: Peanut Butter
                        Sugar
                        Karo syrup
8 Cups any cereal(s)
 Can also add: M&M's, marshmallows, coconut, nuts, etc.

Boil and dissolve PB, sugar, and Karo syrup and pour over cereal mixture. Stir together and enjoy!

Microwave Caramels

  • 1/4 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 1/2 cup sweetened condensed milk
  • 1 tsp vanilla
  • coarse sea salt (I used regular salt)

Combine all ingredients in a microwave safe bowl.  Microwave for 7 minutes, stirring every two minutes. Pour mixture into a generously greased (I used butter) 8 inch square baking dish.  Sprinkle sea salt over the top while it’s still sticky.  Then let cool in the fridge for 45 minutes or until hardened.  Then peel out of the pan (I used a fork to loosen up the edges) and place on a sheet of wax paper (I used parchment paper).  Then slice into pieces with a buttered knife and place on a plate (keep them separate) or wrap in small pieces of wax paper.

Debra's Easy Fudge

2 12 oz bags chocolate chips (4 cups)
1 can sweet and condensed milk
3 tbsp margarine
1/4 tsp salt
1 tsp vanilla
1/2 c nuts if you like them.

Put everything in a microwave safe dish- microwave 3 minutes. stir until smooth and spread in a 9 x 13 buttered pan and cool.

Microwave Peanut Brittle

I love this recipe because it is so easy for one of my favorite holiday treats.

1 1/2 C unsalted peanuts
1 C. sugar
1/2 C light corn syrup
1/8 tsp. Salt
1 TBSP butter or marg.
1 tsp. vanilla
1 tsp. baking soda

In a large glass bowl combine: peanuts, sugar, corn syrup and salt. Cook on high for 7 minutes (mixture will bubbly and peanuts are browned). Quickly stir in butter and vanilla, Cook on high for 2 minutes. Add baking soda, stir quickly just until mixture is foamy. Pour on a greased baking sheet. Cool until firm. Break into pieces. Store in an airtight container.
*You can use salted peanuts just omit the 1/8 tsp of salt.
